My husband lived for a time in New York City, which means— for those who haven’t suffered as I have— that when we lived in Seattle, he never let me forget how the city’s pizza let him down. Since it took roost in its micro Cap-hill space, Blotto has received rave reviews from local gourmands. From The Seattle Times to Eater, folks can't get enough of its pies, a revelatory cross of New York thin-crust and artisanal sourdough.
Adding to the frenzy, the restaurant's humble size creates a sense of scarcity. The website warns that pizzas will sell out every night, and the oblong interior seats a dozen at most. But to assign all of Blotto's success to its size-enforced exclusivity would be cynical. The pizza served at this postage-stamp joint is really worth clamoring for.
If you're lucky, you can enjoy your meal at one of Blotto's tables. They're draped with gingham tablecloths and reminiscent of a late-night East Coast dive. The menu is kept simple but to great effect. Currently, there are only ten items to choose from— including appetizers, desserts, and pizzas. But a down-sized menu ensures the tiny kitchen can maintain high standards with little elbow room.
Five pizzas bear the pressure of pleasing everyone's palates but pass the muster. This includes the vegan fare, which eliminates cheese in favor of shining a well-deserved light on the crust's quality.
And pair your grub with one of Blotto's many delicious wines. With a glass poured from this thoughtful selection, pizza is elevated from a hangover cure to an adult indulgence.
