Sankow's Beaver Brook Farm has been in the family since 1917. Today the farm has 600 sheep and a dozen Jersey cows. The Sankows make 8 different varieties of cheeses from the cow and sheep's milk. The aged feta cheese is like nothing you can find at the grocery store. The farm also produces yogurt, gelato, wool blankets, and wool clothing.

45 Jersey cows produce the milk used to create Cato Corner Farm's cheese. The cows have a diet of grass, a bit of grain, and the whey that comes out of the cheese making process, this helps keep the cheese flavorful and creamy. The cheese is aged in an underground cave where it ripens to peak flavor. From Bloomsday to Hooligan, these cheeses are definitely worth tasting.
