Belle Ecorce farms has been operating over the last decade or so, making some of the most unique and special cheeses in Louisiana.
This unique goat farm has been operating in St. Martinville, LA, making goat cheeses in the traditional French and Acadian ways.
All of the goats in the herd are Nubians and Lamanchas, with a few cross breeds in the herd. Each goat can make up to a gallon of goat milk a day.
Once the goats have been milked, it comes time to churn the milk to create the amazing cheese.
The length of the process depends on the type of cheese that is being manufactured. This farm creates goat cheese, ricotta cheese, feta cheese, as well as raw milk cheeses all from goats milk.
Normally they make the cheeses in small batches to ensure the freshness and taste of each batch.
They create small 10 gallon or larger 28 gallon batches.
There are unique twists put on every cheese that comes out of this dairy, including their well known tradition of packaging the cheese with edible flowers and herbs.
That provides a visually pleasing and delicious twist on these amazing cheeses.
This unique goat cheese farm has made such a name for itself, that it was featured as Louisiana's cheese farm in the 50 States of Cheese book just a few years ago.
