On October 7, 2005, Hen of the Wood in Waterbury opened its doors and dining in Vermont was taken to a new level.
The goal of Hen of the Wood was to combine everything that was important to the co-owners and chefs. After years of discussion, they figured out their recipe for success.
The recipe was simple... If you could pull it off!
The keys were to have a warm inviting atmosphere, a historic and visually appealing setting, seamless service and most importantly outstanding wine and beautiful food.
One of the major reasons why this works so well is the bounty of locally sourced food available here.
So when Hen of the Wood opened its doors, it was the beginning of a beautiful relationship with local farmers, cheese makers and the many other people who make Vermont so special.
The interior is casually elegant in this former mill.
And outside it has a picturesque rushing brook.
Possibly the best seat in the house.
These seats provide an epic view and perhaps more so when the brook, rocks, and trees are covered in snow!
