A fresh pasta restaurant in North Carolina, Bombolo, has been in business for a little more than a year bringing the handmade love to Chapel Hill. It is owned by siblings Executive Chef Garret Fleming and Pastry Chef Eleanor Lacy. According to them - this is not an Italian restaurant or a fine-dining restaurant, they are just Bombolo, and every dish at Bombolo starts with a story.
Bombolo is about reflecting one thing Old World cultures have perfected through their culinary traditions.
Rather than a luxury, it's about making good eating, good drinking, and good living part of everyday life.
The restaurant is owned by siblings Pastry Chef Eleanor Lacy (award-winning pastry chef) and Executive Chef Garret Fleming (competed on "Top Chef.")
They are enjoying a glass of wine at their bar which came from an extensive wine, cocktail, beer, nonalcoholic beer, and after-dinner-drink list which includes some real jewels, such as Laguvulin 16-year scotch and Fladgate 20-year Tawny Port.
The menu changes every week to reflect availability and inspiration, so you can imagine the work ethic involved with this project.
The pappardelle is served with white wine and olive-braised NC rabbit ragu, crispy breadcrumbs, and basil.
The Tagliatelle con Vongole and Pistachio is a classic dish with Aleppo chili, white wine, garlic, butter, and parsley on fresh egg noodles.
As you can see, these hand-crafted dishes take time and passion to create.
This interesting, round morsel is Agnolotti Rosettone stuffed with roasted butternut squash, brown butter, boquerones, toasted hazelnuts, and pecorino.
If you're in the mood for seafood, try the Octopus and Pork Belly ravioli with smoked butter pomodoro, fried rosemary, and pine nuts.
Some options exist that are pasta-free, such as the hearty Ham Steak griddled up with sunny side eggs and sauce morvandelle with chanterelles.
But wait - don't fill up too much because this divine dessert is literally the bombe!
The bombe is an elegant French ice cream dessert and in this case is a delightful combination of blackberry sorbet, mango lime sorbet, and meringue ice cream. We love the added elegance on each plate here, including the shard of rosemary tuile to give a little crunch. As you can see, nothing is spared.
