The restaurant opened in 1974. At the time, it served a variety of delicious foods such as spaghetti and no-bake cheesecake.
The idea of breakfast burritos was not new when Tia Sophia's first opened.
For years, individuals were customizing flour shells with eggs and potatoes in their homes.
However, in the 1970s, the owner of Tia Sophia’s made the brave decision to place the breakfast burrito on the menu.
This is believed to be the first time this breakfast dish was served in a restaurant in the 1970s. It is no secret that it was a big success.
Tia Sophia’s New Mexico breakfast burrito wasn’t always filled with eggs, meat, and potatoes like you see it today.
In the 1970s, eggs were optional in the breakfast burrito. It wasn’t uncommon for breakfast burritos to be filled with ground beef and potatoes — lots of potatoes.
While Tia Sophia's breakfast burrito is still a popular item on the menu and has won multiple awards, it isn't the only entree you must try.
The Christmas Burrito will make your taste buds water. This is a large burrito smothered in red and green chiles and it may be one of the best burritos in New Mexico.
