Nebraska may be located in the middle of beef country, but that doesn't mean we're all about the steak. There are plenty of amazing vegetarian restaurants here, but the granddaddy of them all might be Grateful Bread in Lincoln. It's been serving vegetarian, vegan, and other healthy options in a totally groovy setting since 1998.
Grateful Bread/Freakbeat Vegetarian has been a groovy staple of the Lincoln culinary scene since 1998. Its easy-to-recognize storefront greets hungry visitors from all over the city and beyond.
Inside is a wonderland of curious, colorful, and cute decor. The walls are covered in all kinds of attention-grabbing objects; you'll notice something new every time you walk in.
The casual eatery was originally a bakery called simply Grateful Bread. It wasn't until the early 2000s that the owners began offering limited lunch selections as well.
They added a few soup selections to their already-popular offerings of bread, rolls, massive cookies, and other bakery items. Soon, the soups were joined by several varieties of mac and cheese along with treats like rice bowls and crepes.
The emphasis here is on healthy, creative food. The hippie aesthetic or lack of meat may make some Nebraskans leery of visiting, but trust us - you'll want to experience this unique place.
There's no menu at Grateful Bread/Freakbeat Vegetarian. The specials of the day are listed on handmade signs and hung up for diners to peruse as they wait in line.
Everything here is vegetarian, and there are plenty of vegan and gluten-free options as well. If you've got special dietary restrictions, this is the place to be for lunch.
Whether or not you get a whole meal here, be sure to try the baked goods. The enormous cookies could almost be meals on their own, and the scones are so good you'll want to take some home for tomorrow's breakfast.

Why We Love It: It's taken several trips for me to figure out my perfect "weekender bag that's TSA approved," but I've found my perfect carry on with the TOBIQ Colorado 30L. This diner is modeled after the trailer-type diners that became popular in the U.S. almost 100 years ago. Don't worry, though, this diner is much newer than that.
There are 28 Penny's Diners altogether, all of which are located next to Oak Tree Inns. Although we don't usually feature chain restaurants, Penny's is the kind of place that calls for an exception.
From the moment you walk in, you know that this place is pretty special. From the black-and-white checkered motif to the ample chrome and the line of stools at the counter, it really does feel like being in an authentic diner from the past.
Whether you choose to take a seat at the counter or make yourself comfy in a booth, you'll be able to watch your food being prepared in the open kitchen. That's one of the simple joys of eating in a real diner.
This charming restaurant is open 24 hours a day and the full Penny's Diner menu is served all the time. If you get a hankering for biscuits and gravy at 9 p.m., they've got you covered.
