Dayton is one of the towns in Kentucky that could get lost in the shuffle if you don’t take the time to check it out. As a current resident of the town, I can say with certainty that it is well-worth a trip, and the authentic German cuisine offered at Tuba Baking Co. is one of the greatest reasons why!
One of the most fun offerings of the pretzels is the different shapes, sizes, and colors that they come in. Last year, when the Cincinnati Bengals were fighting for a Super Bowl, they took it upon themselves to make “blackout” pretzels to cheer the hometown team to victory.
Tuba Baking Co. is known for their otherworldly pretzels (and for good reason), but they have a ton more to offer. Between the full German food menu to the line of beers straight from the Motherland and their incredible Beirgarten, this space is truly special.
There are several European breweries in Kentucky, but I would put their list up against any claiming to have the best German beer in the United States. As a big fan of German beers myself, this place has it figured out.
This Flammkuchen is created by crafting a short fermented sourdough made of spelt and rye to limit the rise but still have the flavor, rolled it out super thin and toped with creme fraiche, thin onion, Alto Aldige speck, and a light blend of butterkase and Swiss. Unreal.
Every weekend, these hand-pulled pretzels go into the oven and result in one of the best snacks known to man. Each pretzel is served with their famous spicy mustard, German cheeses, or sauerkraut. Not a bad option out of the three.
Tuba’s Brezeln are fully sourdough and each batch starts with their 13 year-old rye starter that takes three days from start to finish. They use Southern German grains like spelt and rye in each batch. Hand shaped and dipped into a traditional lye bath to get them to that deep rich Maillard-Mahogany crisp crust with the soft buttery sourdough crumb steaming within. As good as it gets.
This delicious Cordon Bleu is a prime example of their ability to button things up and offer an authentic German cuisine that goes so far beyond the German staple items.
