When Kansas became a state, and railroads began weaving their way across the countryside, hotels and restaurants began popping up all over the place, in hopes of a rush of new customers. This timeless restaurant has stood the test of time, and in my opinion, won. Here you'll find a warm atmosphere, and warmer fried chicken dinners.
Way back in the 1870s, right after Kansas became a state, this hotel was a warm and welcoming stop along the Chisholm trail, where railroads were supposed to develop and bring business with them.
Originally known as the Cowtown Cafe, this spot has been through many owners and many customers. It suffered for a while when the railroads ended up going through Junction City instead of near the Hotel, causing them to lose the business of future travelers, but it persisted.
It survived, however, through the business of local soldiers during WWII, making sure it was known to be the best place around for a family style chicken dinner, first served in 1915.

Why We Love It: It's taken several trips for me to figure out my perfect "weekender bag that's TSA approved," but I've found my perfect carry on with the TOBIQ Colorado 30L. Why I Love It: Fact: Airplanes are notoriously dry, dry, dry. No matter how much water I drink both before and during the flight, I always find myself in a hydration deficit for days. The Sunflower State's culinary reputation as a no-frills, all-American, down-home type of state may not be entirely true - we do have some pretty phenomenal fine dining opportunities in Kansas! With that being said, our specialty is definitely the type of hole-in-the-wall cafe that you'll typically find in small or medium-sized towns. You know the type of place, where locals gather around cups of coffee in an unassuming setting. It's the sort of nostalgia-filled joint that makes you feel immediately at home and reminds you of simpler days. If you're seeking that type of atmosphere in Hutchinson, KS, we know just the place. You'll find it at The Firehouse Cafe, an aptly-named restaurant that's housed in an old fire station and is serving up some of Hutch's most delicious eats around, for home-style breakfast and lunch that's as good as Grandma used to make.

The unassuming restaurant is tucked away in an old firehouse that's more than 115 years old. The building has served a number of roles since then, including a store and a private residence, but for the last decade, it's been The Firehouse Cafe, one of the tastiest spots for breakfast and lunch in Hutchinson.
You'll still find some remnants of the building's past life here, with firefighter-themed decor on the walls and even helmets and fire coats on display.
There's a lot to look at, and we love repurposed buildings that display evidence of their former existences, but the real draw here is the food. The home-cooked meals here are some of the best around, and it's no wonder why. Most of the ingredients are sourced locally, so everything is as fresh and truly Kansan as possible.
Whether you're looking to start your day off with a heaping plate of a good old-fashioned breakfast or want to enjoy the restaurant's famed sloppy joes, there's something on the menu for everyone here, served up with large portions and friendly service.
