Blue Springs Cafe is the sister restaurant to Diamond Mineral Springs in Highland. It was built to help far-traveling customers more easily find their restaurant, and more importantly their food.
This roadside restaurant opened in 1992 in what used to be an old Stucky's. It is located just off I-70 and Highway 160 so you can hop off real quick for a bite to eat before heading on your way.
When it comes to comforting things to eat here, the star of the show is the foot-high lemon meringue pie. Patrons also enjoy chocolate, banana, and coconut creme pies.
