Just east of Peoria in the small town of Eureka, someone had the good idea to open a homemade ice cream shop and sell to hot and hungry locals.
Uncle Bob's Homemade Ice Cream first began as a vendor at the Heart of Illinois Fair in 1980 but can now be found in grocery stores and restaurants all over the region.
It carries your standard flavors: chocolate, vanilla, and stawberry. The stand also has about 50 specialty flavors to choose from, such as Irish Car Bomb (made with real Guinness), Salty Caramel Sunflower Seed, and Expresso Java Chip.
There are also about 10 seasonal flavors that will keep you coming back even in the fall to enjoy pumpkin pie, maple nut goodie, or cinnamon ice cream, to name a few.
