RSVP is a restaurant located in West Cornwall. It is only open on Friday, Saturday, and Sunday nights and you must have reservations to dine at this culinary gem.
The restaurant opened in 2001 by Chef Guy Birster and co-owner Charles Cilona. The two had owned bistros together before, but RSVP was a long-time dream of a special concept restaurant that would require only the two of them to run.
Treat your incredible dining experience as if you are going to a private dinner party, show up on time and bring a bottle of wine, then take your seat and prepare to take the culinary journey of a lifetime. There are no menus, the same meal is served to each guest who arrives that night.
Chef Guy Birster, who began training in France when he was 14-years-old, will craft a five-course meal with his endless skill. The first course will be a divine soup to get the meal underway.
As you begin to settle in to enjoy your meal, you'll feel as if you have joined an intimate gathering. There is only one seating per night, only 20 seats available, and the courses are strung out over several hours. Consider it to be an event rather than just a meal.
The second course will feature poultry, perhaps a Phillo wrapped chicken, cheese, and spinach with mushroom flan decorated with deep fried spinach. But each weekend features a different meal, so expect to be pleasantly surprised.
The kitchen is open to the dining room, so you can see the chef working his magic over the stove. The fragrances drifting out of pans will transport you to culinary heaven.
The third course features either fish or shellfish. In the past, the chef has made a delicious Monk fish over potato pancakes with lobster tail.
Next coming out of the kitchen is a beef course, you might taste a fillet with porcini mushroom and froi gras with steak tartare, beef carbonnade along with mashed potato and Romanesco. The meals highlight seasonal and fresh ingredients, so the menu changes much throughout the year.
It is hard to believe that just two men with the help of a dishwasher are able to create such a unique and fine dining experience. Their longevity on the restaurant scene proves that this distinct dining experience is working well in Connecticut.
The meal is not over until you have indulged in an exquisite dessert. Past patrons have enjoyed an apple sorbet over caramelized apple between Sable cookies with a pot de creme. No matter what the owners put on your plate, you are sure to be delighted.
