7. Brains, eggs, and grits
Pork brains and scrambled eggs are considered a delicacy in Arkansas. Combine it with grits and you're bound to go hog wild at breakfast time. Extra points goes to those who would reach for the tobasco sauce and use it well with this meal.
6. Jalapeno lemonade
This unusual beverage was on the must-try menu at the Arkansas State Fair last October. It'd be nice to see it make a comeback at the Hope Watermelon Festival with a dash of sweet flavor and lively color enhancing the drink.

It's no secret that Arkansas loves to fry. The fun is in knowing what's being battered in goodness. Pickles and mozzarella cheese don't sound too appealing together in their normal form, but deep fry the two and add some ranch dressing (or marinara sauce). There are possibilities there.
